Ingredients:
- 1.75-2lbs chicken thighs
- 32 oz chicken broth
- 3 lbs yellow potatoes
- 1 onion, chopped
- 1 T garlic salt
- 2 teaspoons paprika
- 2 teaspoon ground black pepper
- 3 T parsley
- 1 tsp thyme
- 1 package natures ranchers no sugar bacon
Toppings
- 1 package natures ranchers no sugar bacon
Instructions
- Add chicken thighs, broth, potatoes, onion, and spices to crock pot. Cook on high for 1 hour then cook on low for 5 hours (or until chicken is "fall off the bone" tender.
- Cook bacon in oven at 425 until crispy
- While bacon is cooking mash the crock pot ingredients (mash potatoes and this will shred the chicken).
- Top with crumbled bacon bits
