Crock Pot Chicken Potato Soup

Ingredients:
  • 1.75-2lbs chicken thighs
  •  32 oz chicken broth
  • 3 lbs yellow potatoes
  • 1 onion, chopped
  • 1 T garlic salt
  • 2 teaspoons paprika
  • 2 teaspoon ground black pepper
  • 3 T parsley
  • 1 tsp thyme
  • 1 package natures ranchers no sugar bacon
Toppings
  • 1 package natures ranchers no sugar bacon
Instructions
  • Add chicken thighs, broth, potatoes, onion, and spices to crock pot.  Cook on high for 1 hour then cook on low for 5 hours (or until chicken is "fall off the bone" tender.
  • Cook bacon in oven at 425 until crispy
  • While bacon is cooking mash the crock pot ingredients (mash potatoes and this will shred the chicken).  
  • Top with crumbled bacon bits
